Black Gold Saffron Cheese Gennari
The "OroNero" is a cheese made from raw milk, with a semi-hard texture, slow maturation, cylindrical shape, and a slightly convex or almost straight rind, with slightly flared faces. The rind is "black" in color coated with a substance suitable for food treatment; the cheese has a minutely granular structure with a flakey fracture... It is produced with milk from family cows and is aged for just under nine months.

The characteristic softness, despite almost a year of aging, is due to the high percentage of fat content, as a result, the texture of "OroNero®" cheese is so pleasing to the palate. "OroNero®" is particularly suitable for risottos, pasta dishes, shaved over rich salads, and makes an interesting pairing with honey.
